Real Good & Real Healthy Cashew Nut, Loaded Herb Dip/Sauce Recipe

Dip need not be a guilty pleasure, this activated cashew nut herb dip is literally super food on steroids.

This nourishing recipe is very easy to make, all you need to do is soak your cashew nuts overnight (no cooking required) and then blitz them in the blender with herbs of your choice and a few other basic ingredients.

Holistic cooking tip – soaking seeds and nuts before eating removes most of the anti-nutrients, making the absorbable nutritional content higher.

Raw cashew nuts are a rich source of iron, magnesium, and B vitamins, and adding fresh herbs adds extra vitamins as well as strong antioxidants and cancer-fighting plant compounds. I personally like to eat this with paleo crackers or raw carrot sticks and it also works well as a delicious sauce to go with chicken. No need to regret this snack!

Ingredients

1 cup of raw cashews

1/2 cup of fresh herbs of your choice – Just one type of herb will do but combine 2 or 3 for the best possible flavour such as parsley, cilantro, dill, sage or basil.

1 tablespoon of rice or white vinegar

1/4 teaspoon of natural sea salt

2 tablespoons of olive oil

Method

  1. Rinse the cashew nuts and leave them to soak overnight in some water.
  2. Rinse them again and blitz them in a food processor or blender with the rest of the ingredients (rinse the herbs first).

Tip: For sauces you can either just dollop some on food or heat the dip in a pot and thin it down by adding a little water, nut milk, or organic cream.
