Nice cream is my favorite new sweet treat. It looks and tastes like ice cream only it is pretty much just a healthy smoothie with less milk so you can eat it as often as you like! Most people would probably have this as a dessert but since it is just as healthy as any other smoothie bowl I actually eat this for my lunch quite often. You can get creative with the flavors as most frozen fruit will work but I find adding a banana gives the best texture. This nourishing recipe is super easy to whip up in just minutes.
Mango is full of vitamins and is a top superfood. To learn about the health benefits of mango, check out my Superfoods Bible.
Ingredients
1 well-ripened frozen banana
1/2 cup of frozen mango pieces
2 or 3 heaped tablespoons of coconut yoghurt
A dash of milk of your choice
Desiccated coconut to sprinkle on top
Method
Just blend all of the ingredients in a food processor or blender for 30 seconds to 1 minute (until smooth). You may find the bits stick to the side and you have to scrape them off with a spoon a few times as you go until it all mixes. The more milk you add the easier it will be to blend but the more runny your nice-cream will be – 1/4 of a cup should be about right. Scoop into a bowl and sprinkle with some desiccated coconut or chia seeds.
You shouldn’t need to sweeten this but if your fruit was not very sweet just add a little honey.
