I know what you’re thinking, since when is bacon healthy? Well, it’s not really, however, a little bit occasionally probably won’t hurt you but if you don’t like to eat bacon then pancetta also works for this dish. If you are counting calories just get shoulder bacon as I’ve done here and also because this dish is mostly salad leaves it’s super low in calories even with the bacon.
This salad is very light but it’s also extremely satisfying and the flavour is intense.

Ingredients
Mixed salad greens
1/4 of a cauliflower
5 large strips of bacon
50g of blue cheese
Red wine vinegar
Olive oil
Pumpkin seeds
2 tablespoons of capers

Method
- Heat the oven to 180 °C.
- Chop the cauliflower into small florets, season with salt and pepper and a dash of red wine vinegar, and stir to coat evenly. Cook this for half an hour in a large greased dish turning once or twice.
- Fry the bacon until browned and then cut it into long strips.
- Slightly chop up the salad greens and toss them with a couple of dashes of olive oil, red wine vinegar, and a handful of seeds plus the capers.
- Arrange the salad on plates, placing the cooked cauliflower around the edges. Then break up the blue cheese and sprinkle this on top and then place the bacon strips on top to finish.
