Low Carb Paleo Muesli With Blackberry & Walnut Recipe

When I found out I couldn’t eat grains anymore recently, one of the reasons I was gutted was I couldn’t make my pumpkin pie oats anymore. I’ve never been a fan of breakfast cereals but oats, porridge, and muesli were my favorite morning treat. Thankfully I have discovered there are a number of ways that you can make these dishes by getting creative with ingredients. This nourishing recipe is my favorite so far and it tastes sort of like halfway between porridge and muesli only it is more nutritious and suitable for anyone watching their carbohydrate intake.

It’s a bit more effort than just pouring cereal out of a box but so worth it, you will feel like you’re eating at a cafe I swear!

Paleo Muesli

Ingredients

1 green apple

1 teaspoon of honey

3 tablespoons of slithered almonds

3 tablespoons of ground flaxseeds

1/2 teaspoon of vanilla essence

1 teaspoon of cinnamon

1 cup of full-fat coconut milk

Fresh blackberries & walnuts or your choice of topping

Method

  1. Peel and grate the apple and heat in a small pot with all of the other ingredients, stirring in the honey as it heats up.
  2. Heat until hot but not boiling and then let sit for 15 minutes.
  3. Pour into a bowl, top with a handful of halved blackberries and a sprinkling of walnuts, or get creative with the fruit and nuts of your choice. Maple syrup is delicious with this just don’t add the honey if you are going to use this as a topping, it will be over-the-top sweet as there is already some.
