Healthier Vegan Cacao Nib Chocolate Truffles Recipe

These vegan and refined sugar-free chocolate truffles are so delicious that you’ll wonder why you ever used to eat sugary chocolate in the first place. A perfect treat to serve up for your guests this Christmas.

Ingredients

3/4 cup almond butter

4 tablespoons coconut oil (to help the truffles set)

1 cup cacao powder

1/2 cup natural honey

1/2 cup coconut cream

1/2 cup cacao nibs (to roll the truffles in)

Method

  1. Place all ingredients but the cacao nibs in a small pot and heat until just melted, mix well.
  2. Set aside to cool then place in the fridge for 3 hours, until the mixture is firm.
  3. Roll the mixture into balls the size of a golf ball and roll the top half of each in the cacao nibs.
  4. Place the truffles in a container lined with baking paper and store in the fridge until ready to serve.

Note: These truffles will keep in the fridge for approximately 1 week.
